If you think “one emerald = one fixed dollar,” the trading hall will confuse you. The dollars follow the food bag you cash out, not a single exchange rate.

One emerald can cash out anywhere from about $0.12 (golden carrots) to about $6.30 (cooked chicken) in this grocery window. Pick the trade, not a single “emerald rate.”
Emeralds are game tokens, not real money. The dollar spread shows up when I price the food trades with U.S. grocery stand-ins. Your villager’s demand and Hero-of-the-Village discounts can move the bag.

How I calculated it
Java base villager food trades (wiki tables; no Hero-of-the-Village, no demand inflation). Shelf $ = food count × U.S. grocery stand-in from What does a villager food trade cost in real grocery money? Dollars per emerald = shelf $ of that bag (one emerald in / food out, or the reverse cash-out framing used in the table).
